Freekeh (also known as farik or frikeh) is the name for roasted young wheat, and it is a traditional food of the Middle East and Northeastern Africa. These “super grains,” with their unique and delicious flavors, are ideal for grain bowls, side dishes, entrees and baked goods. Try them and you’ll see!

Directions

Basic Cooking Instructions

Bring 2½ cups water and ½ teaspoon salt to a boil. Add 1 cup cracked freekeh, cover and reduce heat to medium-low. Simmer until liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, for 5 minutes. Makes 4 servings.

Store in a cool, dry place. Keeps best refrigerated or frozen after opening.
