Falafel is one of the most popular foods form the Middle East. It is nutritious, simple to prepare and very flavorful. Small falafel patties are served inside pita bread with fresh greens topped with delicious sesame tahini dressing. Originally falafel was the food of the caravaneers on their long desert journeys. 1. Combine Falafel Mix with cold water and let stand for 10 minutes.
2. Pour vegetable oil 1/2 inch deep or more into a deep fryer or skillet. Heat oil so falafel patties fry vigorously (approximately 355-375° F).
3. Form small patties or balls using two spoons or a melon baller. Fry patties 1 minute on each side until brown and crisp. Place patties on paper towels. Serve while hot.
