You will also need:

1 T. Olive Oil, 1 lb. Mild Italian Sausage, 12 C. Beef Broth, 29 oz. Can Petite Diced Tomato, 3 Medium Zucchini, 1 C. Red Wine

Cooking Time About 1 Hour

Directions

Makes about 12 12-oz. servings.

What you need:

1 T. Olive Oil
1 lb. Mild Italian Sausage
12 C. Beef Broth
29 oz. Can Petite Diced Tomato
3 Medium Zucchini
1 C. Red Wine

Optional:

Try turkey Italian sausage and use 2 orange peppers or 1 box frozen spinach instead of zucchini. Add white win instead of red and enjoy a colorful bowl of lentil soup!

Here’s what you do:

Rinse, drain and pick over lentils.
Heat olive oil in a 6 or 8-quart pot.
Crumble and brown sausage in oil, breaking up clumps with flat end of metal spatula.
Stir in contents of Indiana Harvest Sausage and Lentil Soup Mix seasoning packet.
Add lentils and broth. Bring pot to a boil, reduce heat to low, cover and simmer 30 minutes.
Add tomatoes, zucchini and wine. Bring back to a simmer, cover and cook 30 minutes.

Enjoy with crusty Italian bread!
