A staple of the Southern diet for over 300 years, black eyed peas have long been associated with good luck. What’s definitely lucky is their nutrient profile, rich in protein, iron, potassium and B Vitamins!

Directions

Sort and rinse. Bring 2 cups water and 1 cup peas to boil, reduce and simmer for 60-90 minutes, or until tender. Drain and serve.

Suggested Uses:

• Serve with rice, bulgur, or other whole grains.

• Traditional flavor pairings include ham hock, bacon, garlic, tomatoes and vinegar.

• Add to salads with plenty of fresh seasonal herbs.
