In our kitchen, we always have a large bottle of dried figs soaking in balsamic vinegar. We use the richly infused liquid for salads and sauces. We wanted to extend this staple from our home to yours, so we created this rich dressing that is perfect for any salad.

Our New Favorite Salad

Marinate 1½ lbs boneless, skinless chicken breast in ½ cup Balsamic Fig Dressing for 2 hours. Grill chicken, cool and slice. To 8 cups of gently torn red leaf lettuce, add 1/3 cup cran-raisins, ¾ cup diced Granny Smith apple, 1/3 cup crumbled chopped pecans and 1/3 cup crumbled goat cheese. Toss with ½ cup Balsamic Fig Dressing and top with grilled chicken. Makes 4-6 servings.
