Directions

Combine 1 cup Vitacost® Mushroom & Green Lentil Rice, 1-3/4 cups water and a pinch of salt in a saucepan over high heat. Bring to a boil, immediately reduce heat to a simmer, cover with a tight fitting lid and cook until all liquid is absorbed and rice and lentils are tender (about 30-35 minutes). Remove from heat and let stand 5 minutes. Fluff with a fork and serve immediately. Serves 4.

Once cooked, there are many ways to enjoy this satisfying side dish:

Stuff acorn squash, peppers or mushrooms
Top with beans, tempeh, chicken, beef or another protein of your choice
Add your favorite spices, toasted nuts or sautéed vegetables.

Keep dry and at room temperature (59°-86°F [15°-30°C]).
