Directions

Basic Cooking Instructions

Pilaf: Bring 1½ cups water and ¼ tsp salt to a boil in a medium pot. Add 1 cup amaranth, reduce heat and simmer, covered until liquid is absorbed, about 20 minutes. Makes 4 servings.

Cereal: Bring 2½ cups water and ½ tsp salt to a boil in a medium pot. Add 1 cup amaranth, reduce heat and simmer, covered, for 15 minutes. Makes 4 servings.
