Heirloom Yellow Eye Beans

Creamy yellow eye beans are culinary chameleons! Very milk themselves, they absorb complex flavors well, making them an excellent addition to hearty soups, rich cassoulets, & smoky baked beans!

Directions

Sort & rinse. Cover with water & soak overnight. Drain. Bring 3 cups water & 1 cup beans to boil, reduce & simmer 1-1½ hours, or until tender. Drain & serve.

Suggested Uses:
